Green Chinese tea.
Preparation
Use 1 teaspoon of tea, approximately 2g, for a 2 dl teacup. Pour over water that has boiled and cooled to 70°C. Steep for 2 minutes, then strain.
The tea can be poured up to three times. Keep the water temperature at 70°C for each infusion and extend the steeping time for the second and third infusion. As an alternative, the first infusion can be steeped for 1 minute, with each following infusion steeped for longer.
For cold preparation, pour cold water over the tea using 1 teaspoon per 2 dl of water. Leave it in the water for 2-3 hours, then strain. Add sugar, honey, citrus fruits, fresh fruit or fruit juices to taste.
